Sweet Potato Turnip Soup

SWEET POTATO TURNIP SOUP

One of the local schools had a community gardening event over the weekend. Kids and parents came to help the school with laying down mulch, pull weeds, and plant. The school was kind enough to give away turnips from the garden for our efforts.

The treat was turned into a hearty soup. 

Ingredients:
1 onion, chopped
2 garlic cloves, minced
1 leek, chopped (whites and greens)
2 sweet potatoes, cubed
5 turnips, cubed
2 boxes of broth (32oz) 

spices:
1/2 tbsp dried basil
1/4 tsp paprika
1/4 tsp cinnamon
1/8 tsp cayenne pepper
salt to taste

Instructions:
1) Broth sauté onions until translucent. Add garlic and spices, and cook for about 3 mins while stirring in the spices.

2) Add leeks, turnips and sweet potatoes. Stir to mix, and sauté for a few more mins. Add broth. Broth should just cover the vegetables. Cook until potatoes and turnips are soft.

3) Pour half the soup into another container. Puree with an immersion blender or a regular blender and return back to the original pot.
