Zucchini Pancakes

I was experimenting how to minimize the oil on making these pancakes. After several attempts of trying to use the least amount of oil possible and the Calphalon non-stick pan utterly failing, it finally hit me. Parchment paper! I cut a small piece to fit the size of my pan and lowered the heat to medium-low. It worked perfectly. I was able to cook the rest of the batter without any oil at all.

1 large zucchini, shredded
2 tbsp. of ground flax seed
6 tbsp. of water
2/3 cups of garbanzo flour
pinch of salt

1) mix ground flax seed and water, let stand for about 10 mins 

2) mix all the ingredients in a bowl

3) allow the pan to heat up, then cook small dollops on low heat
